Carrot Casserole Recipe for Diabetes and Kidney Diet Plans
This recipe for carrot casserole is very kidney friendly as well as for diabetics.
Carrot Casserole Ingredients 3 cups carrots, peeled and sliced into 1/4 rounds 12 Ritz low-sodium crackers, crushed 2 tbsps butter, melted 2 tbsps onion, minced 1/4 tsp salt 1/4 tsp black pepper 1/3 cup shredded cheddar cheese
Preheat oven to 350 degrees. Place carrots in a large saucepan over medium-high heat and boil until soft enough to mash. Drain and reserve 1/3-cup liquid. Mash carrots until they are smooth. Stir in crushed crackers, onion, butter, salt, pepper and reserved liquid. Place in a greased small casserole dish. Sprinkle shredded cheese on top and bake for 15 minutes. Serve hot.
