Chicken Vegetable Linguine Recipe for Diabetes and Kidney Diet Plans
This chicken vegetable linguine recipe is healthy for both types of diets.
Ingredients 1 pound boneless, skinless chicken breasts 3 tbsps extra virgin olive oil 1/2 package (8 ounces) linguine 3/4 cup broccoli 3/4 cup cauliflower 3/4 cup baby carrots 16 grape tomatoes 2 tbsps lemon juice 3/4 tsp Mrs. Dash Cut up chicken into small strips. Heat pan on medium heat with 2 tbsps extra virgin olive oil. Add chicken to pan and cook until done. Cook 1/2 package of linguine according to package directions. Cut up broccoli and cauliflower to bite-size pieces. When chicken is cooked, add broccoli, cauliflower, carrots, tomatoes and lemon juice, cover and cook for 3 minutes. Add drained pasta to pan and then add 1 tablespoon extra virgin olive oil and stir. Add Mrs. Dash, stir and simmer on low for 5 minutes.
