Chocolate Chip Shortbread Cookies
Chocolate Chip Shortbread Cookies 3/4 cup organic white whole wheat flour. such as King Arthur 3/4 cups all-purpose flour 1/2 tsp baking powder 1/2 tsp salt 1/2 cup unsalted organic butter 1/2 cup powdered sugar 2 tsp. orange zest 1/2 tsp. pure vanilla extract 1 large organic egg yolk 2 tbsp organic half and half 1 tbsp organic nonfat buttermilk 4 oz. dark chocolate chips (such as Hershey's extra dark) Preheat oven to 350 degrees. Spray two cookie sheetswith nonstick spray. Combine flours, baking powder and salt in a medium bowl. Using an electric mixer, beat butter, sugar, orange zest and vanilla in a large bowl until well combined. Beat in next three ingredients. Add dry ingredients and beat until dough come together in moist clumps. Stir in chocolate chips. Drop generous tablespoons of dough onto prepared cookie sheets. Flatten each cookie with your fingertips. Bake until just golden, about 18 minutes. Cool on a wire rack.
