Chocolate Nut Balls Great Snack for Diabetes Diets
These chocolate nut balls are a great snack for diabetes patients.
Ingredients 2 ounces unsweetened (preferably dark) baking chocolate 2 tbsps vegetable oil 1/2 cup plus 2 tbsps of water 1 cup date sugar 1 1/2 cup chopped almonds, pecans, or walnuts In a small saucepan, melt chocolate, oil and water over medium heat. Reduce heat to low. Add date sugar. Cook for 3 minutes, stirring constantly. Remove pan from heat and stir in chopped nuts. Drop by the spoonful and roll into 24 balls on a dish, if desired. Roll in additional nuts. Let balls cool. Store in the refrigerator or freezer. Makes 24 balls Nutrition per serving 1 ball: 100 calories 1 gram protein 8 grams fat 7 grams carbohydrates
