Curried Shrimp Sandwiches







Curried Shrimp Sandwiches have almost zero grams of fat and are low in carbohydrates per serving.

Ingredients for Curried Shrimp Sandwiches

3 slices whole wheat bread, crusts cut off

1 1/2 cups small cooked shrimp

1/2 cup diced celery

1 small unpeeled apple, chopped

2 tbsp golden raisins

2 tbsp finely minced sweet onion

1/2 cup nonfat mayonnaise

1 tsp lemon juice

1/2 tsp honey

1/2 tsp curry powder

Salt and Pepper to taste

1 tbsp dill chopped

1. Place the 3 slices of bread on a work surface.

2. Combine the shrimp, celery, apple, raisins, and onion and mix well. In a small bowl, whisk together the mayonnaise, lemon juice, honey, curry powder, salt, and pepper. Add this mixture and the dill to the shrimp and mix well.

3. Spread the curry shrimp mixture onto all the bread slices. With a serrated knife, cut each bread slice into 4 squares or triangles.
