Parsley New Potatoes Recipe for Diabetes Meal Plans
This parsley new potatoes recipe to add to a main dish for supper.
Ingredients 12 small whole new potatoes 1 tbsp olive oil, divided 2 cloves garlic, minced 2 tbsps finely chopped parsley 1/2 tsp salt 1/2 tsp freshly ground pepper Place potatoes in a large saucepan with enough water to cover. Bring to a boil over medium heat. Simmer, covered, until tender, about 20 minutes. Drain potatoes in a colander. Place potatoes in a large bowl. Add 2 teaspoons oil; toss to coat. In a large nonstick skillet, heat remaining oil over medium heat. Add garlic; cook, stirring, for 1 minute. Add parsley, salt, and pepper. Mix well. Add potatoes. Reduce heat to low and cook, stirring constantly, for 1 minute. Place potatoes in a serving dish. Serve immediately.
