Serves 4
1 steak each
4 beef tenderloins (4 oz. each)
1 tbsp crushed peppercorns
1 tbsp olive oil
1/4 cup cognac
1. Evenly coat beef with peppercorns.
2. Heat pan and add olive oil. Sear meat on both sides until golden brown.
Add cognac and allow to flame. Be sure to use caution when the cognac ignites. Work in a space with lots of ventilation. Reduce liquid by half and simmer, coating both sides of beef. Serve immediately.
