Tortellini Basil Salad







This tortellini basil salad has a great creamy taste and low carbs!

Tortellini & Basil Salad

1 package (16 ounces) cheese tortellini

2 tbsps chopped fresh basil

For the Dressing

1/4 cup nonfat sour cream

1 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp Dijon-style mustard

1 clove garlic,minced

1/2 tsp thyme

1/2 tsp salt

1/4 tsp freshly ground black pepper

Cook tortellini according to package directions. Drain in a colander. Rinse tortellini under cold running water. Drain again.

While tortellini is cooling, prepare dressing. In a large bowl, combine sour cream, oil, lemon juice, mustard, garlic, thyme, salt, and pepper. Mix well.

Add tortellini and basil to dressing; toss to coat. Cover bowl with plastic wrap. refrigerate for at least 1 hour. Place salad on individual serving plates. Serve immediately.
