Ingredients
1 small cucumber
1 tomato
1 small sweet onion
1 teaspoon olive oil
1 tablespoon red wine vinegar
Salt and freshly ground black pepper (optional)
1/2 cup ( 2 ounces ) crumbled low-fat feta cheese
Instructions
Coarsely chop cucumber, tomato and onion; transfer to a bowl.
Add oil and vinegar; toss well. Season to taste with salt and pepper if desired.
Transfer to serving plates; top with cheese.
