Fettucine Recipe for Diabetic Meal Planning
This fettucine recipe is rich and cheesy, but without the fattening effects. Fettucine Recipe 1 pound fettuccine pasta 1 tbsp. margarine 2 cloves garlic 1 tbsp. all-purpose flour 1 1/4 cups skim milk 3 tbsps light cream cheese, softened 3/4 cup grated Parmesan cheese 2 teaspoons parsley flakes 1/2 tsp. black pepper Cook pasta according to your package directions. Drain. While pasta is cooking, in a medium saucepan, melt margarine over medium heat. Add garlic; cook stirring for 1 minute. Stir in flour and cook for 1 minute. Whisk in milk until blended. Cook, whisking constantly, until thickened, about 7 minutes. Stir in cream cheese, cook for 2 minutes. Stir in parmesan cheese. Place pasta on a large serving platter. Pour sauce over pasta.
